Vegetarian Tacos

Everyone loves tacos but how does a vegetarian make them? I use to just throw together black beans and Spanish rice to make my taco base. Then I discovered TVP, (Textured Vegetable Protein) this is the best substitute for taco meat ever! This product is so easy to work with; it is all in the seasoning to get the flavors you want.  All you do is add equal amounts of boiling water to the TVP and your seasoning;  That’s it…

With 1 cup of TVP I add: (approximately)

1/2 tsp of oregano
1/2 tsp chili powder
1/2 tsp paprika
1/2 tsp chili flake
1/2 tsp onion powder
1/2 tsp garlic powder

Add 1 Cup boiling water to the small bowl mixture stir together and set aside.
Add salt & pepper to taste while simmering This will soak and expand, thickening, to look like ground meat.

Dice 1/2 of and onion and sauté with a little veggie broth in a medium-sized pan for about 5 minutes. Add the TVP mixture and lower the heat.

 

Next add 1/2 to 3/4 of a small can tomato paste to 1 cup of veggie broth and whisk together. Pour the veggie broth tomato past mixture in with the onion and TVP and allow to simmer for about 10 minutes. Add a little Cholula™ sauce (your choice) season to taste. Set aside.

About 2 years ago I discovered “Tortilla Land™” Tortillas. I love these tortillas! They taste homemade and are fresh out of the package. Cook about 30 sec. on each side.  Prep as many tortillas as you need to make tacos.  1 Cup of TVP should make about 12 tacos.

After you have cooked your tortillas add a little Vegetable oil to the same pan, (about 1/3 Cup) place on med heat. Put a tortilla in to the oil, then Put a large tablespoon of your TVP mixture in the tortilla and fold it over.  Cook on both sides for about 2 minutes. Drain excess oil and set aside. (you have Tacos)

I like to put in my cheese in first (Cheddar/Jack) then a little sour cream, lettuce, tomato, cilantro, avocado and a little more green pepper Cholula™.  Make your taco’s the way that you like them.

Keep in mind, The TVP mixture can be used for any Taco Meat substitute. (taco’s, Burritos, nachos, you get the idea)
